My meat eating kids love these vegetarian meals:

- Quesadillas with sautéed onion and garlic + frozen butternut squash and black bean + sauce of lime and sour cream (yogurt would be healthier)
- Veggie lasagna and enchiladas from cookie and Kate

My veggie kids love a lot of the same things other kids do, just made vegan or veg. Try Asian noodles with soy sauce and steamed veggies & tofu, soups, and classics like mac & cheese (cashew base for bonus point) or grilled cheese. You can always offer a handful of pistachios or whatever nut she likes in case you worry about balance.

Great cookbooks include the Veganomicon (lots of great standards with lots of flavor) or minimalist baker. Good luck!

NP. Can you recommend good Tofu? The only tofu I like is the little cubes you find in Japanese restaurant miso soup. The tofu I’ve bought at Giant tastes terrible.

Op here again- I just enter to then everyone foe their amazing suggestions. We’re pretty much at the halfway mark and DD is still really enjoying trying all kinds of new foods. I honestly didn’t think she’d stick with it, but she’s up every day to try something new and has already found a few new favourites that she insists will have to be in rotation later. I don’t think she’ll stay meatless but I really like knowing we have more plant based options for the whole family.

I’m probably the one who has reaped the most benefit, as I used to be vegetarian and kind of lost that way of eating, but it really makes my body feel better. I’ve also had a lot of fun exploring the suggestions here and pulling out cookbooks I haven’t had out in ages. It’s been a great experience and we still have two weeks.


I appreciate everyone’s suggestions and still looking for more if anyone still has new ones!

Last night I made a simple tart with non butter puff pastry, cream cheese and a whole host of vegetables that needed attention in the fridge. It was absolutely delicious. Tonight I’m going to marinate some tofu and do some kind of grain bowls. DD will probably want some of the Gardein “wings” to go along, which is perfectly fine with me.
