And Hoi An, while a bit touristy, is a beautiful base for eating, exploring by bike, and just chilling. I also enjoyed Sapa in the north.
You should do China. It's a big country but certain places are just amazing. Highly suggest Huangshan Anhui Provence and HK. Also Taipei Taiwan.
