But it doesn’t follow that I regret parenthood or that “you did it right” and I didn’t. Im sure there are people who genuinely regret it but the people OP encounters are just being polite.

If I had no kids I’d have retired at 40, have multiple houses and travel the world.
A lot of people, in my generation at least (millennials), are DINKS because of finances, so they’re not going to live lavishly without them.

Or, you're just angry and bittter that settling and down and having a family is just 'something you do', like getting good grades and going to college. You never really gave it much thought. That's why it seems so frustrating for you when others around you choose to not have children because you didn't know that was an option. You didn't know you could be happy without having children.

There has been unanimous agreement amongst parents as to what this means. If you know, you know. Nobody wants your shallow, empty life. So go take another photo of your dog or plate of food.
If you need a kid to not have an empty life, you must be a really, realllllly boring person.

+1 we all dream about some freedom but we’d never change our lives. No decent person would insult a DINK for choosing that life.
Seems like there a lot of non-decent people here then.

Instead, I will say something like, "oh wow, I wish we could just head off to Europe like you" but know that I am just blowing smoke up your a-s trying to make you feel good. Inside I feel pity for you.
I would not say that. The sentence makes you sound jealous instead of happy for the other person.
