I don’t follow this recipe exactly, but this is the idea. I make the rice in a rice cooker and instead of water, I use the coconut milk. I add the sugar after the rice is cooked. I don’t know if it matters either way.

I bring some combination of bananas, cutie oranges, applesauce cups and bunches of grapes. They always disappear.

I bring something I really like that won't go bad from sitting out and then if others don't eat it I just take it home and eat it myself.

Op here: the other thing I struggle with is portion sizes. If I were to bring moz and tomato skewers, how many do I make. Approx 1 per person? Just 16 so each person can get two and it makes for 8 servings? That’s why I tend to make something inexpensive so I can take vast quantities. I’ll probably do the pretzel bites for tomorrow.

Someone brought a tray of grilled veggies to our last swim team potluck and I was surprised they got all gobbled up. I mean I figured the adults would like them, they were delicious, but lots of kids dished up, too.

Nice change from so much pasta (not totally knocking pasta, it's what I brought, too).

Those mini sliders on Hawaiian rolls always go fast.

Corn on the cob cut in half was also popular.

Once I just sliced up a few long English cucumbers on site because I ran out of time. I had brought a watermelon to slice, too, but forgot a knife, so it was a platter of cucumbers sliced by butter knife and baby carrots. Lame but got eaten!

I agree with a simple Mac and cheese. Also like the Annie’s pretzels. You could also do grapes. Or a platter of chicken nuggets. If you want another hot suggestion, get some fried rice or lo-mein noodles from Chinese restaurant and some spring rolls.

Want a simple meal for a crowd of kids.
