I wonder if believers in God would say they "know" there are no fairies or other supernatural beings -- that they only believe in their version of God and not any of the other stuff that's out there to believe in.

Dp. I think you could say I don’t believe in XYZ but don’t *know* with certainty. I don’t think those are incompatible.
I always liked saying I was agnostic because I figured it just meant I didn’t care. Religion and gods have no place in my life, is not something I think about regularly, and I simply don’t care what others believe. But in reality I’m probably closer to atheist than agnostic.
Probably many non-believers are like you. and probably many believers in God don't proselytize or insist that people must believe in a certain way (their way) in order to reap the rewards of their beliefs.

Post any definition and I’ll find a few others. How about we say there is no universal definition?

Perhaps there are different definitions because agnostic sounds nicer and more sensible than atheist. But their beliefs may be the same.
Atheist does not mean knowing there are no gods. It means not believing in any gods.
But I' ve heard many agnostics state it as if "atheist" is a dumb position because no one can really KNOW that there is no god.
Which is a weak argument. I’m not holding my KNOWING about gods’ existence to a higher standard than I do about other non-existent things. Gods = Santa = unicorns.
I KNOW about gods to the same extent as I do about Santa, etc.

Kinda like how people define being “religious” or theist? Seems like there’s a lot of competing definitions of religion that are entirely based on feelings.
