Pasta al forno: pasta with beschamel, tomato sauce, mozzarella, prosciutto, hard boiled egg, Parmigiano all layered. I added homemade meatballs but they were totally unnecessary. I am looking over to leftovers tomorrow!

I had a bunch of potatoes from our CSA, so I made a hash brown and kielbasa casserole with a salad. Chocolate and peanut butter bars for dessert.

Stuffed peppers. My absolute favorite early fall meal. When I was in high school, the last kid left at home, my mom would make this on the first day of school. SO. GOOD.

Made a pot of homemade tomato sauce, and am serving that with spaghetti and a side of roasted cauliflower. I was going to add garlic bread for the kids and maybe a salad, but am feeling lazy so haven’t decided yet.

OP here and I love that this thread took off and people are still contributing.

This Sunday my DH is making tortilla soup and I'm thrilled because I'm too tired to cook but still get a delicious homemade meal. Plus it's finally soup weather.

Roasti chicken -- stuff the chicken with 1/2 a lemon, 1/2 a garlic clove, some thyme and a bay leaf, then rub the outside with olive oil, salt and pepper

Saute zucchini with shallots and a little tomato

Warm up frozen spanokopita from TJ's

I love Sunday dinner
