I agree with other pp's, take notes, b/c you will forget by next year.

My turkey actually turned out the best I ever made. I had a 20 lb turkey, cooked at 325 for 4.5 hours. I used a couple different recipes. I used softened salted butter under the skin and over the skin, put kosher salt and pepper in the cavity and some on top. In the cavity I added some cut up onion, celery chopped (large) some fresh parsley and thyme.I placed a cut apple with the skin facing out to block the cavity. On the bottom (turkey is on a rack), 2 cups water, some cut up shallots, sliced carrots and some celery. I covered it with foil (lightly) for the first 2 hours. I never opened the oven. No basting! it was delish
