Due to a lack of a true aristocracy to create clear dividing lines, class in the US is a total mess. That's why people associate UC with WASPs...they are the only group in the US to have a multi-century history of wealth and power.
Given that you have family money you can rely on for things like kids' education, I would say you are UMC or UC depending on which definition you use. As you can see, some people will refuse to call anyone UC if they aren't worth at least 8 figures. Personally, I think there is a clear difference between first generation UMC and multi-generational UMC (like you)...and one way or another it's important to make that distinction, because it matters.
She's only UC if she's inheriting at least 7 figures. Doesn't sound like she is though. Sounds like there is a family foundation and she only gets a tiny % for education and down payments. I find that to be pretty common among families that used to have money.
