I'm pretty sure the PP was wondering why they drink so much overall. They're always drinking no matter the occasion, no matter the yome of day, and to excess.
Charleston is apparently a drinking city and many on the show are just outright lushes- Shep, who had to cut back on his intake per doctor's orders, being the prime example.
