I actually think given your nanny's 2 years of reliability and no days off during COVID, that as far as an employee goes, she has demonstrated reliability and trust in her time in role. Because of this I think she is actually being responsible in planning for additional days off just in case. All of this is somewhat irrelevant though because as you say, she has the time off available to her.
No she isn't! What about the rest of us who get the vaccines and then wait and see what happens? Some people sail through without a problem. Some have a problem with a second one. Some have a problem with the first one. Even my 87 year old MIL sailed right through. Clearly you have a good and personal relationship with your nanny, which is great. But when it comes to employee time off requests any conversation or reworking of an employees request needs to occur within the confines of their time off rights.
