In your honor, we took the family to Copycat Club. The kids loved the dumplings and liked the rest of the food as well. There was a decent crowd, but it wasn't full and we weren't taking seats from anyone else. Also, our tab was at least as much as many other groups because we were all having a full dinner, whereas lots of other folks were just have a drink or two and maybe a snack. The owner and bartenders were all better off financially by having us there. As for the other patrons, we simply went about our business and in no way interfered with anyone else's time. If they viewed that as a buzzkill (and it didn't seem like they did), that would be on them and not us.

We've done this- but it's always been a bar attached to a good restaurant and we've always ordered dinner for DS (usually quite nice dinner, since he's a bit of a foodie) and a non alcoholic drink (something fancy and a bit costly it's own right).
We've never felt like people wanted us to move or leave-- there's typically a lot of turnover as people eat/drink or wait for a table at the bar- one stool doesn't matter all that much.
I think if it's just cheap appetizers and drinks (like a *real* bar), crowded and two minors are taking seats- I could see it being a little thoughtless (not rude, but inconsiderate and out of place).

Most parents sitting with kids at a bar are not going to the kind of establishments that you are describing. More importantly, they generally aren't going out "late evening" when you are more likely to see the sort of issues you mentioned. Instead they are the folks there late afternoon or early evening, often when places are less crowded.
