How in the world is OP supposed to hold her baby, wrangle her other young kid, guide the older two (they are old enough to hold their own plates, but some things may be too high for them to reach for themselves) and use whatever spoon, tongs, etc. to serve food to the plates in the buffet line? There is just no way!

If you want to do a character breakfast, decent options would be Garden Grill (brought to your table family style) or Akershus (mostly brought to your table with an optional buffet for pastries/fruit/etc).

And Ohana .. also family style.

I've taken my 2 of mine to Disney by myself since they were 3 and 5.5 and recently took my 3 when they were 9, 7, and 18mo. The problem you'd have is the one you've already identified ... your 2nd would have to be 7yo to ride without an adult. And CMs at the rides do ask more often than not.

Do you have another family member who might be interested in joining you? In our recent trip with all 3, my brother joined us for most of our trip so I only had one full park day alone with all 3 kids.

Otherwise, just spend the daytime at the pool and playground at your resort and go in the evenings with DH.

Also .. you should have a link through your DH's conference for buying Disney park tickets. Unless it's changed it's something like $89/ticket for after 1pm and $59/ticket for after 5pm. So if you're only going into the parks in the afternoon, you can save a lot on tickets.

They will not get much out of the trip at that age and then you can have lots of fun with the two older kids.

Even then, I would plan for more pool time and/or shows while husband in meetings. Then do the rides as a family.

Poor kids, leaving half of them at home. It's Disney, a place that was literally built for all ages. Either take them all or don't go, but please do not take half your children.

Magic Kingdom
The Many Adventures of Winnie the Pooh - will only fit 2-3 across per bench and there's only 2 rows per honey pot
Pirates of the Caribbean - can fit up to 4 across

EPCOT
Frozen Ever After - can fit 3 across
Spaceship Earth - will only fit 2 (3 with small kids) across and only 2 rows per car

Animal Kingdom
Navi River Journey - can fit 3 across

An adult, 3 kids and a baby can fit in Navi.

An adult, 3 kids, and a baby can fit in frozen.

I took my 3 kids to Epcot on Saturday and we rode frozen.

I have taken my kids by myself to Disney. 3, 6, 10

Planning the morning to the letter, aking a nap, going to the pool, and having dinner in the parks and an extra ride or two is the way to do it. Rent a one bedroom Villa by renting points from Dave's DVC & Use garden grocer.

I haven’t read all the responses, and have taken my kids to Disneyland and not disneyworld, but I agree about activities.

The shoes were enjoyable and high quality - in Disneyland this is things like frozen, mickey’s magical map, the daily parade etc - I’m sure there’s something similar in Disney world.

My 4 year old’s favorite spots were the Swiss family Robinson treehouse (climbing, banging on things etc); the spray area (we started carrying changes of clothes); and a big playground / exploring area. I remember years ago loving the jumping fountain in Epcot that I don’t think is there anymore, but I’m sure plenty of non-ride magic is available - there’s always meeting the characters!

Good luck.

While your husband is at a conference do fewer rides and more activities.

Animal Kingdom is good - look at the animals, get safari tickets as everyone can ride in the car.
Hollywood studies - sign up for Jedi training, see a stunt show.

In Magic Kingdom - jungle safari can hold all of you, small world, the kids can play around in the different play areas,
