+1 from mom of kid in ST and OT. This is absolutely a growing field with not enough people in it.
I'm another mom of a kid in OT and agree it looks like a great field - but OP said she wanted a career her daughter could enter without a graduate degree and ST and OT both require master's degrees.
OP - I'd encourage your daughter to look into nursing, particularly travel nursing. Companies hire nurses to take 3-6 month jobs all over the country. If she likes beaches, she could go to Florida or Southern California for the winter, and come "home" for the summer, all while working.
No matter what she majors in, though, I'd encourage her to take at least one entry-level computer science course and one basic accounting course or business course. Having a basic understanding of both - even if she never uses them directly - will allow her to take the "other duties as assigned" tasks at whatever job she does end up in that may lead to better assignments later.
