It's not a universal holiday, get your head out of the sand. Billions of people around the world do not celebrate it. Saying "Happy holidays" would be universal, "Merry christmas" is not.
Now would I be offended if someone said merrry christmas to me? No of course not and I even say it back. What I do find slightly offensive is that you assume it is a universal holiday.

I wish this were true but I know a few people who will not only be offended but will lecture you about wishing them a Merry Christmas. I unfortunately know from first hand experience. These people are completely uptight and the types that will find offense with most anything.
