In my opinion, none of these (the current season) are legally binding. Think about this, in order to get a marriage license, don't both people have to show up to a courthouse in person? Unless NY has some crazy laws, I don't see how any of these marriages are legal.
I wondered about that as well, but they spoiled the couple that didn't work out in the first season by finding the papers filed with the court for annulment, which implies that they were legally married. I think they may have them complete the paperwork after the ceremony.

These are the only 3 couples for the show, the format is the same as the first season. Wedding, honeymoon, and then reality hits when they have to decide where to live and be a couple.
