Major Appliance:
$6,000 Capital 36" gas range with 4 burners plus wok burner. So much better than the pseudo-commercial quality that Viking et al sell to consumers.

Small Appliance:
$250 Zojirushi Umami 10 cup rice cooker

A stand mixer (also out on the countertop), a food processor and a set of good knives (the chef's knife and a small serrated knife get the most use).

Turn down the heat. "Simmer on low for two hours" means "turn the knob to the lowest setting it has without the flame going out."

thanks, I'll try it on the lowest on the simmer dial. To be fair, I haven't tried Le Crueset on the Wolf yet--on my old GE gas, I always scorched stuff.
