The bathrooms at my work have doors. I don't invite my coworkers in to share.
How exactly do you avoid pooping at work? If I have to go, I have to go. I can wait an hour, maybe, but not a whole day? I'd be miserable.
If our bathrooms had doors, I might feel differently. Alas, we only have stalls, so there is definitely some "sharing" of noises and odors going on. I'm just not comfortable with that level of intimacy with my coworkers. In terms of how I do it, I usually poop in the morning so it's not an issue. If I must poop at work, I go down to the gym locker room, which is usually empty during the day. If anyone comes in while I'm doing it, I wait for them to leave before resuming.
I have to say that I pretty much never hear anyone pooping in our normal work bathrooms, although sometimes I can tell there is someone quietly waiting in the largest stall. So I think most women, at least at the places I've worked, take the same approach I do.
