Usually some kind of omlette or egg cup/casserole. This week we had leftover chili so I mixed it with eggs and spinach and baked them as muffins...easy to grab in the morning. Bacon/sausage and eggs is always good, usually with some fruit or greens. Sometimes I make hash with sweet potatoes, onions, and top it with a poached egg or some leftover meat from dinner or both. If I'm super rushed it's a lara bar and coffee with heavy cream. Smoked salmon is delicious with scrambled eggs and chives. It took me a couple of weeks to rethink breakfast and now I can't see eating anything else. When I ate cereal for breakfast the thought of salad for lunch was revolting. Now I eat a nice filling breakfast and lunch is usually a lot of raw vegetables protein and some olives.
I don't eat wheat because I'm gluten intolerant and rice/corn based meals seem like a waste of calories....well, wheat based meals seem like a waste too to me now that I'm used to eating more variety in my diet. As for the person above who made the sex comment on my previous post...I enjoy food a lot more now that I'm not eating a bunch of bland grain based filler. I mean, bread, tortillas, and pasta are just vehicles for the really good stuff and often take the place of vegatables on many people's plates. You'd be surprised how exciting my diet is without grain.
