I am usually a from scratch baking person but I had a relative that used to make the pistachio pudding tunnel cake that was popular in the 70s/80s and it was so good.

Oooh what is pistachio pudding tunnel cake? I googled it but just got a bunch of pistachio cake recipes that looked pretty normal. No mentions of a tunnel?

Oooh what is pistachio pudding tunnel cake? I googled it but just got a bunch of pistachio cake recipes that looked pretty normal. No mentions of a tunnel?

tres leches cake with fruit on top. I have made a pineapple upsidedown tres leches cake before and really enjoyed that.

or brownie ice cream sundaes. Usually I like my brownies on the fudgy side, but for a sundae I'd go with them being more cakey.
