Use a shake of ranch seasoning instead of plain salt and pepper. Otherwise keep in the onions, lime, garlic. Different flavors and addictive taste.

Raw onions ruin guac.


+1 they are just too overpowering whether they are red, soaked in lime juice, whatever. They taste good but nobody wants that on their breath for another 6 hours.

Tequila. Tequila is vegetal and would work with the flavor profile. Not quervo. Jimador if you don’t want to spend too much.

Mezcal maybe but the smoke would probably overwhelm the flavor. It would be common to be served mezcal with guacamole so it’s at least acceptable.

Or try Dominican avocados. They are milder and creamy compared to nutty Hass, although I prefer hass.

But if you want a variation, try that rather than bacon. Avoid pork fat because the avocados are already providing the richness. Add more fat and now you need to balance with more acid. Avoid this by not adding more fat. You already have fat as the main ingredient, the next step is balance.
