A big piece of salmon baked (350/20ish minutes) with mayo smeared on top and then sprinkled with dill (dried or fresh), side of rice and veggie

Pasta with tuna and lemon and lemon from an ancient Mediterranean cookbook.

Tacos are so much work- all the chopping!

Enchiladas - we have a few variations but primary spinach & bean with red sauce or roast chicken (usually a shredded rotisserie chicken from Costco) with tomatillo-sour cream sauce.

Tacos - ground beef, ground turkey, chicken fajita (grilled chicken), or salsa chicken (instant pot)

Teriyaki chicken and veggies with either ramen or udon noodles

Breakfast for dinner - eggs, bacon, hash browns

And that's about it for meals everyone will eat. My youngest is still of the "boxed Mac and cheese only" persuasion.

I'm also surprised by it. In my family we never ate tacos. Literally, never.


It was a frequent meal in my house when I was growing up, but I grew up in California.

For my kids I'm more likely to quesadillas but tacos are in the rotation too, just not as often as my mom did. I make them with corn tortillas, which we always have on hand, not the boxes of taco shells

Enchiladas (I vary the fillings depending on mood)

Rice / protein bowls - this is nice because the kids can assemble the ingredients themselves and you can change up the flavor. Sometimes we do Asian, sometimes more middle eastern, and sometimes more Tex mex. I cut up the ingredients and then kids serve themselves.

Pasta with pesto - again, vary the ingredients and if there’s protein / type of protein. Also good for leftovers I can send to school next day. Costco has a very good pesto sauce. In Summer I make my own pesto.
