Lawrence, on the other hand, I get. That was a well done redemption arc. He recognized his sins and eventually gave his life trying to atone for them.

Also, what was up with that guard toward the end in the Handmaid's bunkroom? Was he in on the plan? If not, his actions are tough to understand. He just sort of points his gun ineffectually and then disappears without any effort to prevent the escape.
If it's poison, and the handmaids are forced to eat it too, they're dead. If it's sleep-inducing, and the handmaid's have to eat it, they take a nap and live to fight another day.
Also, since you brought it up, heat and most poisons don't tend to mix well, and timing a poison that isn't immediate is hard to calculate, especially in a baked good. There are plenty of things that'll make you sleepy that could hide well in a cake. Just sayin'...
