1 russet-type potato
20g flour
20g cornstarch
1t oil
40cc/ml water
3T canned corn (drained; I used the corn water as the water in this recipe, but watch for added salt/sugar)

peel potato and cut into small, corn kernel-size cubes
toss w/ flour, cornstarch, oil and water, add corn

fry until golden, flipping once, and drain. Top with salt, seasonings

I doubled it and it fed me and the kids (generously). We had a few leftovers, and they re-heated nicely in the air fryer.

I’m the open faced sandwich PP. My breakfast on Wednesday was a Dunkin’ Donuts pumpkin cake donut and a medium coffee with cream. Not all days are so virtuous!

Apple flavored iced coffee w/ a splash of coconut creamer, a honeycrisp apple sliced and dipped in caramel dip, and a handful of fudge stripe cookies.

I’ve recently gotten into a Northern European style open-faced sandwich type breakfast:

Toasted slice of Aldi German whole rye bread
Butter
Slice of ham
Slice of Edam or Gouda
Sliced cucumber
Salt and white pepper

Plain Greek yogurt, blackberries, dried apricot, hazelnuts, and seeds (chia, hemp and flax). Big glass of water because I keep feeling dehydrated.

Well, they do cater a bit more to the British crowd. Ideally, I would love the Italian breakfast with more salami, prosciutto, and bread. I am not sure what you dislike about my breakfasts, though. I am in heaven with the breakfast; it is the highlight of my day.

Yes, it is very common in Italy to have a lot of cold cuts, prosciutto, hams, salamis, and good bread, and you make open-face sandwiches. Additionally many pastries will be offered. Have you never been to Italy or Europe to see what makes a good breakfast buffer?
Fruit is offered too.

Today I had 2 eggs, scrambled in butter, with a slice of TJ sourdough bread, toasted with butter. Often I have plain full fat greek yogurt with a honey drizzle and frozen berries and sliced almonds. I love both breakfasts!
