OP - when I say extremely thin I mean she is 5'7" and is about 128 pounds. Exactly where I would like to be. But instead I am 5'7" and weigh 148 pounds.

Intense cardio drives hunger hormones which makes it very hard to stick to a lower calorie diet.
Best way to feel good at a lower calorie level is to eat lots of fiber. Beans/legumes, vegetables, fruits, whole grains nuts and seeds.
+1 on stopping the intense cardio- it drives hunger and you don’t need that. Weight lifting and walking will do wonders + up your protein intake. You may not lose too many if any pounds on the scale, but you will look better and your clothes will fit better!
