If you make a good chicken salad, that would be a fine lunch. I might roast some asparagus to go along side it, and maybe have a toasted baguette slices.
And you know what: your guest might not like it. Any dish you make has the potential to be something your guest doesn’t like. Assuming they are a well functioning adult, they will eat more of things they enjoy, less of things they don’t, and say thank you for your hospitality. Maybe they aren’t a well functioning adult, but then that has nothing to do with what you made for lunch, and nothing you can control.

First page has some suggestions. I prefer walnuts to pecans in my chicken salad, but nuts are required.


I just reread the first page. No other suggestions that aren’t just variations of chicken salad.

Ok but who cares . It’s actually kinda weird to plan a whole menu around whether a man prefers the chicken salad or not. OP’s husband is a man who requested it. A man who is attending can definitely eat it even if he might not choose it if there were other options. You’re definitely suggesting it’s too girly for men to eat and shouldn’t serve it for that reason which is pretty odd.


The whole point of this thread is to discuss. If you don’t want to why are you here? If i was having a young male colleague to lunch this is NOT what i would serve and you shouldn’t either.
