Leeks are so sandy and stringy.
I made a potato leek soup (the recipe is actually potato ONION leek) and just omitted the leek and let the onion carry the way and it was much better. Sorry leeks.

The sand can be a b* to clean, but I love the flavour. Roasted leeks with butter mmmmm

How do you sugar a beet? They already have a ton of sugar in them? All you need is to roast them to get the sugar taste.

I love carrots when they are seasoned and roasted. Even my picky eater loves a good couscous bowl with roasted carrots, onions and chickpeas.

OMG. These are two of my favorites. One of my best memories from childhood was eating sweet jackfruit. As for okra -- just pan fried some tender okra the other day and ate the entire pan.
