We now bring a twin air mattress on most trips, even overseas ones (we typically just pack in a separate checked bag. It is only a mild pain compared to listening to my teens complain about not having enough space.

If you think your son might molest your daughter, this is a bigger situation than sleeping arrangements during vacation.

Older boy, younger girl (now 19 and 21). Now, we try to do VRBO or Air BnB with 3 rooms, so everyone can have their own. If we can't find that, or super expensive location, 2 rooms, one with 2 twin beds. They can share a room, but not a bed.

We did all the things others have mentioned, son with dad and daughter with mom, roll away beds, 2 beds plus a pull out. I cannot remember a time when they shared a bed. And as teens, NEVER

I would respect the wishes of the teens. Give them all the options and ask what they would pick.
