Sunday gravy on the stove with sausages and the leftover ny strip from last nights dinner out. Not sure if I’ll make penne, rigatoni or fettuccine. Whatever DH is in the mood for with freshly grated Romano cheese. Salad and garlic bread.

Good to know! I'm going to add it to my list of things to make - the cover picture made it look like a lot of work, but reading the recipe, it seems doable as a weeknight recipe if you grill the eggplant ahead of time.

I mean, I did make it on a Sunday despite the advice that it would work for a weeknight 😂
I also used a jar of Rao’s because I didn’t have enough tomatoes on hand and worked fine!
