OP knows and doesn't like this woman. If she met her/ate a meal, she probably knew GF was a vegan.

If it helps Indian restaurants often can do a beautiful vegan curry. Maybe have him call around and get some takeout? Offer for the main meal. She can figure out the rest later. They probably need to do a grocery run.

Op here. I appreciate the offer. I have more vegan items than I thought. I have 3 kids so I have lots of pasta already on hand. I have fruits such as apples, oranges, bananas, strawberries and grapefruit. Vegetables I have tomatoes, onions, brussels sprouts, potatoes, broccoli, carrots, kale, spinach and I even have some egg plant. Plenty of leafy greens for salads. I have beans and mushrooms.
I won't be going back to the store. I had to wait in a line of cars to get a curb side spot. I can only imagine how crazy it is on the inside.

This could work. Don’t sweat not having that she is just leave it out. You could also chiffonade the kale to add a green element. Serve over rice, quinoa or whatever pasta you have.

Alternatively I’m sure there’s a stew that would lend itself to those ingredients. Or roast the Brussels and eggplant, drizzle with balsamic glaze. Serve over steamed kale, broccoli, green beans or roasted potatoes.

I make a quick sauce with soy sauce, rice vinegar, sesame oil, sugar and chili-garlic sauce.
You can also add some fruit salad or a green salad with citrus and a sweet dressing, that should hold anyone a meal.
