It’s also not very nice to invite someone with such limiting food restrictions last-minute, with no offer of “and we’ll bring plenty of our own food so as to not be any trouble.”

Exactly. It was inconsiderate of his sister and the work she has put in. He should have 1. Asked, not told 2. If sister agreed to additional guest advise that HE would be preparing something for gf as she has special dietary requests.

OP knows and doesn't like this woman. If she met her/ate a meal, she probably knew GF was a vegan.

She knew GF was a vegan, not that GF was coming to the meal 🙄

This. End of story. Your brother sounds entitled.

Um, so? I have a vegan cousin but am not prepared to host her on Saturday on account of she’s not invited to my home on that particular day. If she asked today if she could come for Christmas Id say sure but you’ll need to bring food.

I’d invite them to order carry out. We’re not set up for “vegan.”

If it helps Indian restaurants often can do a beautiful vegan curry. Maybe have him call around and get some takeout? Offer for the main meal. She can figure out the rest later. They probably need to do a grocery run.

Vegan? Most Indian food has butter and/or yoghurt.

Op here. I appreciate the offer. I have more vegan items than I thought. I have 3 kids so I have lots of pasta already on hand. I have fruits such as apples, oranges, bananas, strawberries and grapefruit. Vegetables I have tomatoes, onions, brussels sprouts, potatoes, broccoli, carrots, kale, spinach and I even have some egg plant. Plenty of leafy greens for salads. I have beans and mushrooms.

I won't be going back to the store. I had to wait in a line of cars to get a curb side spot. I can only imagine how crazy it is on the inside.

Bake the potatoes.

Do roasted veggies with tomato, onion, brussels sprouts, mushrooms carrots and egg plant. Done. Toss in oil and balsamic with some seasoning and done.

Do you have peanut butter? Canned beans?

I would set out apples and peanut butter if you have it as an appetizer if others are doing things they can't eat.

A salad, dressing and cheese on the side if you were going to use those for other people.

Roast some veggies with olive oil and salt.

Bake a potato

Some strawberries maybe with a sprinkle of powdered sugar to look festive for dessert

Wow OP, you've got a lot, that's great! How about just chopping up the harder veggies and roasting with oil and herbs, if there's room in the oven? There's also a lot you can do with eggplant, murshrooms, and tomatoes, like pasta or an eggplant dip, or marinated mushrooms or mushroom bruschetta. Or you could make imam bayeldeh if you have onions and olive oil. I get that time is scarce and you probably don't want to do a lot though, I'm sure she'll appreciate anything you have time to throe together at the last minute (she'd better!)

This could work. Don’t sweat not having that she is just leave it out. You could also chiffonade the kale to add a green element. Serve over rice, quinoa or whatever pasta you have.

Alternatively I’m sure there’s a stew that would lend itself to those ingredients. Or roast the Brussels and eggplant, drizzle with balsamic glaze. Serve over steamed kale, broccoli, green beans or roasted potatoes.

Anonymous wrote:I'd do a vegetable stir-fry with some of the vegetables you have. If you have rice, add that, otherwise stir in some cooked pasta.

I make a quick sauce with soy sauce, rice vinegar, sesame oil, sugar and chili-garlic sauce.

You can also add some fruit salad or a green salad with citrus and a sweet dressing, that should hold anyone a meal.

For a Christmas dinner???? Inappropriate
