I think it depends on whether you will be using a nn. Katherine if your want Kate or Katie. Catherine for Cat. Cate and Caite are not typical spellings (though some people like to choose the unusual way)
I think Cate Blanchett did okay for herself.

Yeah, Katherine has been an accepted spelling since before the Crusades. And the "k" is likely from the Greek.
