You're right, it doesn't mean much by itself, but it is a marker of being very processed, which is often associated with a lot of added sugar and/or sodium.

Still think it’s a good question if OP lives on a farm though and grows/raises all their own food. Bread, yogurt, cheese, milk, pasta, it’s all “processed.” If OP just means junk food or things w lots of ingredients you can’t pronounce then she should say that instead of saying processed food.
