I can't remember when I saw this one, but I brought it back out recently, and I make it constantly for lunch:
Toss all of it in a giant bowl. It gets better as the days go on

1 bag Persian cucumbers
1 container cherry tomatoes
1 bunch parsley
1 container mini mozzarella balls
1 container salami
1 shallot
1 can chickpeas
1 can white beans
1/2 jar kalmata olives
1/2 jar pepperonis or banana peppers
1 C grated parmesan cheese

Dressing:
2 cloves grated garlic
1/4 c red wine vinegar
1/4 olive oil
2 tbs dijon mustard
1 tsp sea salt
1 tsp Italian seasoning
1/2 lemon juice

The Moosewood soup? That is like basically my favorite food.


This is so funny because my whole family considers this soup to be a requirement for all celebrations and both my college kids have requested it since returning home a few days ago. I do it with creamcheese instead of the milk/flour combo, a substitute I got from a friend who was also obsessed with it but was looking to reduce prep time.

Thank you so much for posting it! I really thought it was lovely, especially given that there was enough leftover toffee sauce for ice cream later in the week. I made a special trip to Balduccis for the apple butter, and think that was definitely worth it.

Not sure if it is actually my sister (who did travel to the DMV with her family for the holidays this year) asking for the cheesecake recipe, or if we have some bizarro world doppelgängers, but here’s the recipe: https://www.myrecipes.com/recipe/blue-ribbon-orange-cheesecake

You can find it on Pinterest topped with whipped cream and chocolate, but that’s not right. It should be topped with the very finely grated peel from two oranges mixed with a tablespoon of sugar.

I made this for the first time a couple of weeks ago and my husband reacted like I was a Michelin-starred chef. It was a big hit and so simple, I’m not really sure what the magic is exactly!
