For meats that can be tough & chewy like corned beef and ham, it makes it very tender / easy to chew.
I always get my corned beef shaved and have gotten attitude a few times. I find it happens less as I get older. Maybe I go to better stores now, or maybe I seem like a better customer.

I don't get this. You work at a deli. This is really all you have to do and I'm pretty sure that you are paid hourly. Its not like you have work overtime and not get paid because of someone ordering shaved meat. You don't have work to take home.
What difference does it make if you spend your time shaving meat, cleaning the slicer, filling the trays, or scooping something.
I don't get your post. If you're getting paid the same, wouldn't you want to spend your time doing the easier tasks? I'm a nurse, I get the same hourly rate whether I have 5 independent patients or 5 total care patients. Guess which one I would prefer most days?
