OP, I'm curious... what ideas suggested here excite you the most?? (Because I'm really excited about some of them and will live vicariously through what you plan.)

I think I would go to London and Paris, and maybe one other European city.

First - if money is no object, I'd extend to three weeks if possible. Personally - I would rent a home in a small village in Italy, Slovenia, France - maybe England and go there with knowledge of the place and live there - and explore what is unique about it. Shop, cook, walk, go to the town festivals, small theater productions, etc. Take a cooking lesson or class at whatever the region is know for and proud of.

Surprised at how many say safaris as they just seem like an indulgence once removed from reality but I guess I am also not an 'animal are magical' person.

Glacier National Park or Mt. Kilimanjaro (the easy hike to the summit)--the ice caps for these will be gone in our children's lifetime. You can combine Mt. Kilimanjaro with a safari and Glacier with one of the other national parks

Patagonia and Galapagos Is

Scandinavian countries

Moscow and St. Petersburg

Japan and Korea

Rent a house in south of France or a safari.

Since you said that actually money was a factor, can I recommend this which is an amazing place and a decent price:

http://rafikisafari.com/superlekker.html

Totally agree! We did the superlekker, which was one of the best parts of our trip to Costa Rica, though it seemed to me that that particular trip isn't always available and it's hard to know in advance if it will be. We also loved Lapa Rios on the Osa Peninsula, but that was more of a splurge.

I have a friend that works for Backroads, which is the company a PP mentioned, and they do some really incredible trips in many of the places mentioned.

+1. Just check the weather.

How horrible is it in the summer?

The South Island is chilly during their winter. Still gorgeous though. And less crowded.

We are debating 4+ weeks in the summer vs. 2 weeks in the winter. Would also like to go to Australia, but maybe we'd need to break that into a separate trip if we go in the winter.

Whose summer? What months?

These have already been said I think, but it's fun to dream:

hiking in Torres del Paine, Patagonia. However, I think our summer is not the time to go there.

Camping and hiking around the southwest: some combination of Mesa Verde, Bryce, Zion, Chaco Canyon, Arches, Canyonlands, Grand Canyon, Lake Mead, a 1 or 2 day rafting trip, visit a Native American pueblo, Hoover dam

Road trip through Europe - pick the countries based on what languages you speak.

+1. I know it doesn't seem that unusual or adventurous, but my parents did this with me when I was 14 and it left a lasting impression and influenced me to become a worldwide traveler.
