OP asked which is the most trendy -- I vote the metallic silver tiles. Tiles, unlike large hunks of granite, can be easily taken out in 10-15 years if you get tied of them.

I hate the beige tumbled marble / travertine. It looks very dated, especially with 4" square tiles.
A bright white / grey marble subway time can look good and fresh.
