Assuming $600K net
$100K each in 529s for two children
$40K - vacations, Disney for the kids now (elementary school aged) and save for international family travel experience along the lines of a Safari or Machu Picichu in 4 years or so
$10K - work with my children to select a cause to help fund
$200K investments
$150K reduction in principal on mortgage to speed pay-off.

Invest it. I can always figure out what I want to spend it on later. Mortgage rate is too low to pay off the mortgage, I can get more return for the money in some good mutual funds/index funds.

I'm one of the ones who said I'd quit my job to stay home with the kids while they are young (maybe longer, depending on how it goes and their needs). My partner would keep working so yeah, we would be just fine.
