I had the time today, and inspired by this thread, I shopped for all the ingredients and made this. It is currently in the oven. Not the greatest day since it is warm and heavy and it needs to go in the oven, but beggars can't be choosers about which day they have long stretches of time to cook! My kitchen smells heavenly, the chef is getting a glass of the dry red, and I cleaned as I went so nothing to do now but wait....

OP, what did you end up making?

If you like Indian food and spicy I would make a biryani. It takes all day but freezes extremely well. You could make a huge catch and have enough for the occasional family meal throughout the summer.

Totally agree with tamales. Also lasagnes, especially if you make a bunch to freeze.
Anything hand rolled or stuffed can become very contemplative. I usually do rugelach but agree with pot stickers or hand rolls.
