DH is Asian and when we are there -- pretty much 90% of every meal is vegetables. The other 10% is rice and maybe a tiny bit of fish or meat.
Americans have shit diets (I say this as an American) which is why we're so fat and everyone's on 10 medications as soon as they hit 50.
I was thinking of Africa and Central America... I found very few veggies in those places.

Why so nasty? She was just answering the question a PP had asked her. OP I sympathize, I don't like veggies much either. I do eat a lot of fruit though, which I hope helps.
I have also found that I like vegetable soups better than most other vegetable preparations. Just steam the veggies or roast or saute them with some olive oil and onions, add them to soup stock and blend. I use a hand blender and blend in the pot. Super easy, fast, and relatively tasty -- to me anyway. You can do this with carrots, squash, broccoli, peas. I also add spinach to egg drop soup. Check out Mark Bittman's "How to cook everything" soup chapter, that's where I get most of my ideas.
