Just went to the store:
Monday: big pot of 3 bean chili so I can freeze for later in the month
Tuesday: grilled chicken fajita salad (kids eat the chicken with some carrot sticks)
Wednesday: spaghetti and meatballs
Thursday: veggie quiche with a spinach salad
Friday: order in or go out!
Saturday: leftovers
I'm also going to attempt to make homemade poptarts for a fun breakfast treat!

Anyone have good quinoa recipe suggestions? Just read that soaking first can take off some of the bitterness. (But I don't know if that also reduces the nutritional value...but I don't much like the quinoa bitter.) Thanks!
I rinse mine several times and that takes away enough of the bitterness for us. My favorite way to make it is to boil it in chicken stock and lots of curry powder. Then I add a little olive oil, sliced almonds, peas and raisins or craisins. Tonight were going to try Real Simple's recipe for quinoa patties with sweetpotatoes.

Sunday: Homemade bolognese and pasta (triple batch to freeze rest for baby arrival in October)
Monday: "Fiesta" salad: grilled chicken, black beans, corn, tomatoes, avocado, ranch and bbq sauce mixed as dressing.
Tuesday: Broiled tilapia and broccoli
Wednesday: Mediterranean turkey burgers and greek salad
Thursday: Leftovers
Friday: CPK frozen pizza and salads
Saturday: We usually grab a casual dinner out
WOHM mom: my philosophy on the weeknights is if I can't get it on the table in 20-30 minutes, I don't make it.

Subject: Meal Plan Monday
Looks like we took August off. Can we start doing this again? I have no plan to share this week but would love to hear others' plans.
I also plan to do a lot of freezer cooking this Fall - ie, make double batch of something and freeze half for future use. I can't seem to find the time to cook every night, even if it is something that takes less than 30 minutes. Luckily Fall/Winter meals such as soups and stews freeze well!
