Updating -- The garlic cheddar cheese is NOT the cheese I am looking for. Trying horseradish cheddar next!

I know you said it wasn't cheddar but... what makes you so sure?

What about this white garlic cheddar from Ohio? Not so far from Buffalo?

OP here. Isn't farmer cheese moist? Can't remember. The cheese I am thinking of is hard and dry.

While I didn't grow up there, I spent six years in school in Central New York. Wegman's is the best! Just stopped there recently for Dinsoaur BBQ sauce.

For the poster from MoCo, there's a Wegman's in Frederick on Route 15, which is shortly after you cross the I-70 interchange.
