Monday and Tuesday, my mom was here and made us dinner both nights.
Wednesday, I made this but green curry is really easy and I prepped everything around 1pm while DC was napping. Bok choy and shiitake mushrooms came in our CSA share so we had them on hand which is why I made them.
Thursday: DH made dinner - spaghetti squash was in our CSA share as was the salad stuff. Pasta sauce from a jar, meatballs were frozen from Trader Joes.
Friday we had potato leek soup - potatoes and leeks came in CSA share, broth was made by my mom on Monday, and again, I prepped everything while DC was taking his afternoon nap.
I go grocery shopping about once a week and generally plan meals around what we get in our CSA share. I also do all of my prep for dinner while DC#1 is at preschool and DC#2 is napping so when it comes time to make dinner, it hardly takes any time because everything is ready to go.
