Easiest is baked apples- wash and core. Fill with raisins, cinnamon, sugar, vanilla. Can sub out raisins for other dried fruit or just preserves mixed with a littl flour for the "stuffing"- Can leave out sugar for the sugar free complainers. Bake.
Small Honeycrisp works well, no peeling, can put each in a cupcake paper in muffin tin for baking. Plate them - dab of whipped cream on top-small cookie stuck in it.

I am buying a Costco pumpkin pie and making two ice cream pies- Haagen-daz pretzel crust with dulce de leche ice cream. Super easy and the need for the freezer frees up valuable fridge space. I drizzle it with a little smuckers caramel (squeeze bottle) before serving. Is it a little pedestrian? Sure, but it is a crowd pleaser and so damn easy.

Or a galette. Just use store bought pie crust (Trader Joe's or Dufour).
