I love that PP is shocked and appalled at the suggestion of feeding chicken and rice or chicken sandwiches to hungry teenage boys. Mom of one toddler, I’m guessing.

beef stroganoff over egg noodles
baked teriyaki salmon, green beans, and rolls
bean and cheese nachos with toppings
sheet pan chicken thighs and gnocchi (has sun dried tomatoes, spinach, etc., going on)

My DH and DD have claimed the leftovers in our fridge, so for me, I am making a frittata with sliced potatoes, prosciutto, red onion and goats cheese. It is really good leftover, so I plan to have it for lunch tomorrow too.

I'm being good about not buying extra groceries to make what I really want to eat (chicken soup! Pelmeni!), given that I'm not getting paid right now. So we're having red beans and rice tonight, with some andouille sausage we had in the freezer and a ton of beans, and a side salad. At least it's one of my oldest DC's favorites.

Not sure what we'll make tomorrow. Spicy braised tofu with green beans Thursday, homemade pizza Friday.

skillet with potatoes, cabbage, apples, and field roast sausage

Some type of white bean skillet with sourdough bread, and the leftovers arugula on top
Pork tenderloin with roasted vegetables and potatoes
Burger night (and I am in "Camp Mayo" when it comes to burger toppings)
Sandwich and/or leftovers night

I ate dinner at work, frozen Mac n cheese dinner from Trader Joe’s. DD went to chick fila with Grandpa.
Tomorrow is leftover shepherds pie. Except it’s not really shepherds pie because I use ground chicken ( not lamb) and add a can of white beans to make it go farther.
Had it last night and it’s for dinner again tomorrow.
Weds will be pesto marinated salmon with rice and broccoli.
