I know Ann Arbor reasonably well. I lived there for 2 years (1998-2000), worked there for close to 20, have a kid at the University of Michigan.

I hate coffee. I mean, it smells nice and all, but to actually drink the stuff? Vile. I tried iced coffee once. It tasted of pain and suffering. Never again.

More of a hot chocolate guy myself. Among the national chains, Panera's hot chocolate is actually pretty good (I suspect that's not what the local-or-bust crowd wants to hear). For Ann Arbor local, I'd say Cafe Zola has the best, though I haven't had it in years (and I'm conflicted about the place due to how the owner treats staff, according to a variety of social media).

For fresh horchata, go to Produce Station.

For Cuban-style batido, try the Chocolate Español at Frita Batidos.

For morning tours, we love to get a coffee first and poke around. For afternoon tours, we love to get a smoothie.
