DP. Hmm. Weird because there are tons of good options off site within 15 minutes of WDW for under $200/night. Williamsburg is often under that price unless it’s a holiday or graduation or something. We too often stay for under $200/night. We sometimes stay nicer too though. It just depends on the time of year and situation.
We just got back from Gaylord Palms in Orlando and paid $239/night. That is below what it usually is but deals like that aren't *that* rare.
Awesome hotel! Rooms were gorgeous and clean, pool area was AMAZING for kids, and there was a cool atrium with animals. And only a 10-15 minute drive to Disney!
But I know we could've gone much cheaper but still close and reasonably nice.

I think they are both now more than $500, but when we went they were under, and both very nice for what we paid:

The San Diego bayfront has some nice hotels under $500 a night. Beautiful views, great location.

The Marriott Vacation Clubs on Hilton Head are well priced and comfortable during the off season and shoulder seasons.

This question is pretty subjective. People can have very different definitions of what constitutes the "best" hotel, so as a caveat I'll say that I'm not a pool person and I don't care about feeling that I'm surrounded by luxury, but I do very much like a room that has interesting (not cookie-cutter) design with thoughtful touches, a friendly and helpful hotel staff, and a lobby that is welcoming and comfortable but not "buzzy".
With those parameters, my faves under $500 are:
The Hoxton -- Chicago (Fulton Market)
The Sophy -- Chicago (Hyde Park)
Old Faithful Lodge -- Yellowstone
Honorable mention goes to Courtyard Marriott in Pasadena -- We stayed there the week that everything shut down as Covid descended on us in 2020. The staff were lovely and did their best to try to help everyone dealing with the uncertainty and fear. It is a totally plain vanilla place, but in a great location. If you're going to Pasadena, check it out!
