You'll get a feel for it over time. Don't get frustrated the first few times when it isn't perfect. Keep doing it once a month and you'll get good.

+1 I have a bunch of pricey Japanese knives. I send them out to a pro about once a year.
So most of the time your fancy knives are not sharp. Why even bother having them?
A good knife sharpener is not cheap and I would rather have consistently sharp knives I replace every 10 years than expensive knives than are sharp one month out of 12.
I have over 30 knives for different purposes. They remain sharp a lot longer than a month.
