We just tried the meatloaf and mashed potatoes from Costco’s take and bake prepared foods section. It was outstanding!! I can’t believe we hadn’t tried it before. We also regularly get the chicken street tacos and the stuffed peppers. All are under $20 and feed 4 of us with leftovers.

Yesterday I made beef chili.

- 2 lb ground beef (90% lean, which was on sale for $5.99/lb... I snatched up a bunch of them and put them in my spare freezer)
- Chili powder
- Oregano
- Cinnamon
- 1/2 jar of Wegman's mole sauce (secret ingredient)
- 1 can Rotel tomatoes with green chilis
- 1 onion
- Scoop of frozen fire-roasted corn
- 2 cans of pinto beans

Total time: 6 hours in the crockpot

Total cost: $4/serving, or thereabouts.

Sometimes I'm so lazy, I just make fried rice with all the leftovers. If I need more veggies and protein, I add the frozen peas and eggs. It can be done in 15 minutes. It is the fastest.

I use a rice cooker so it's probably 3 minutes of putting the rice in the pot and washing it and pushing the on button. The rice can be cooked anytime of the day. It takes about 20-30 minutes for the rice to cook. And you can cook at the capacity indicated by the pot. That's usually 4 cups of uncooked rice for the one I have (for over 15 years).

It will take about 1 hour 10 minutes of cooking, mostly unattended simmering after I brown the chops, onions, and assemble everything. Then maybe 10 minutes of work at the end to get the corn cooked and the salad made.

Kid made herself some Ramen -probably 5 minutes and 5 bucks. DH and I had dosa and coconut chutney. Probably took 25 minutes to make 5 dosas and the chutney, and cost… maybe 5 bucks?

I live alone….(widowed). I cooked all of this in less than 2 hours. I work full time and also try to get to the gym.

Wegman’s Crab Cakes (2 for $16). One tonight, the other tomorrow night’s dinner.

3 ears of corn: one tonight, one tomorrow, one at lunch.

I also roasted the following for meals on Tuesday and Wednesday and maybe Thursday:

3 Roasted peppers (yellow and orange)
2 Roasted sausages (Whole Foods, on sale)
Convect roasted asparagus and red onion.

I plan to toss the onions, asparagus, and sausage with pasta on Tuesday.

Also cooked Pope’s Beans that I brought back from Italy. Cooked these to add to side dishes and salads.

Kind of elaborate.

Shrimp tacos on corn tortillas with a homemade pico, pineapple salsa, tomatillo-avocado sauce, cilantro, and Spanish rice.

Made a simple green salad with evoo/apple cider vinegar dressing.

Cost probably $30? I used a lot of stuff.

Not sure exactly what everything cost but:
- chicken parm
- chickpea pasta with tomatoes, mozzarella and basil
- arugula salad

Some prices I know off the top of my head — chicken was about $7 for 2 lbs from Aldi, mozzarella was $10 for 16oz and we used half, tomatoes were $6 and we used half, two boxes of pasta were $7.

Fed 4 adults and a toddler with plenty of pasta, salad leftovers.

Ginger soy Mahi mahi fillets $10? (came bagged and frozen from costco so don't remember)
Steamed jasmine rice $1? (buy it in 25lb bags so couldn't tell you what it cost per meal)
Stir fried napa cabbage and shiitake mushrooms $3.50 for the mushrooms and the napa cabbage came in our CSA share.

Took about 20 minutes to prep the veggies and make the marinade for the fish. Cooking time was about 20 minutes for the fish, 15-20 for the rice and less than 10 min for the veggies.

rhubarb bars and ice cream for dessert.

Oh in terms of time, 5 minutes to put the beans in the instant pot this afternoon, then about half an hour to make the curry, rice, and salad.

I don't honestly remember the specific prices of each ingredient, most of which we have in our pantry or fridge anyway, nor do I want to try to work out what fraction of the bag of ginger I used for this recipe or how to account for the cost of a spices.

But it's beans and rice. So not that expensive.
