I actually know nothing about Joan's hobbies, maybe she excels in cocktail party conversation in which case she'd be boring, but maybe she has some great hobbies, I just don't know.
Gerry's version of boring at least came with some modulation to the voice and expression to the face. Joan is very flat, both in voice and affect. It may be the surgery or maybe more, but it's not going to carry interest on visual/audio media. Not enough to carry a show.
He was also active, into ATVs, pickle ball, rappelling. Joan doesn't seem active.

Yes, because he didn't like where she lived. It was a non-starter for him. She's since said she would consider moving at least PT, as long as she could bring her horse. But that's still pretty limiting.

I don't think they'll risk alienating fans of the GB women by picking someone new. All the women have fans. They'll figure out which one has the best balance of being most popular with a general audience and with potential suitors, and go from there. Only a few harpies are saying they won't watch if X is selected (Leslie seems to be the target there). Most will give it a try, whomever is selected. I definitely will!

I mean, sure, Gerry was tempted for a while, but ultimately he went with safe Theresa. Unless they get a lot of ancient horn dogs for bachelors, and then ewwwww.
Do we really want all the men and drama to reside in the female lead? I personally would be depressed to watch a 60-something woman self-destruct on national TV. Or do we want the lead to be show us an active, interesting, and also mature 60-something, and we can watch the drama unfold among the guys.
