18 kids? Do 2 sheet pans of pancakes with mini chocolate chips or sprinkles mixed in. Cut each into 20 -- 2 pancakes per kid. Serve on paper plates with whipped cream and sprinkles on top. Plus juice boxes. If you want to be fancy get some silver and gold sprinkles from Michaels.
Bust out some coffee and buy some cheap mini muffins at the store for the adults. The grown-ups won't eat at the party anyway.
And be good to yourself. Take some time to relax and just veg out in front of the tv. Frozen pizza for dinner all week if you need to.

No waffle irons, that will be much more work. Fresh pancakes are the best way to go for people to enjoy them and not just eat a couple of bites. Find someone who has been a scoutleader and can cook pancakes quickly for a large group.
