But yes, people of northern European heritage can consume stupendous quantities of cheese. I grew up in a cheese factory town and think cheese at every meal is normal. Cheese is so good.

That means it is plentiful and cheap, not that it is a nutritional rock star. Americans eat a ton of wheat and corn; again, cheap and plentiful, not the most nutritious food.
Rice is fine, but it’s not great, and there are many healthier choices. That doesn’t mean people shouldn’t eat rice as a staple, it’s just a silly argument to say it is great for you just because lots of people eat it.

Yes! I am Indian-American and was going to say the same. Way unhealthier than that stuff OP listed.
And yes our community is "healthy" as adults - that's mostly just a socioeconomic thing.
